Description

A delicious creamy mushroom chicken pot pie made with tender chicken, sautéed vegetables, and a flaky puff pastry crust.


Ingredients

  • 2 cups mushrooms, sliced
  • 1 cup frozen peas
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 1/2 cups chicken broth
  • 2 tablespoons flour
  • 2 tablespoons butter
  • 1 sheet puff pastry, thawed
  • 1 egg, beaten (for egg wash)
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat Oven: Preheat the oven to 400°F (200°C).
  2. Sauté Vegetables: In a large skillet, heat olive oil over medium heat. Add onions and garlic, sauté until translucent. Add mushrooms and thyme, cook until mushrooms are browned.
  3. Make Sauce: Move the vegetables to one side of the skillet. Melt butter in the empty side, then whisk in flour to create a roux. Slowly add chicken broth, stirring constantly to avoid lumps. Pour in heavy cream, bring the mixture to a simmer.
  4. Combine: Stir in shredded chicken and peas. Season with salt and pepper. Let the mixture simmer for a few minutes until thickened.
  5. Assemble Pie: Transfer the filling into a baking dish. Roll out puff pastry over the top of the dish, trimming excess if necessary. Brush the pastry with beaten egg.
  6. Bake: Bake in the preheated oven for 20-25 minutes, or until the pastry is golden and puffed.
  7. Serve: Let cool slightly, then garnish with fresh parsley before serving.

  • For extra flavor, add a splash of white wine when cooking the mushrooms.
  • Ensure the puff pastry is cold before placing it over the filling to ensure it puffs well.
