- 1 cup heavy whipping cream
- 2 tablespoons sugar
- 1 teaspoon vanilla extract
- 1 cup mixed berries (raspberries, blackberries)
- 2 tablespoons sugar
- 1 tablespoon lemon juice
Instructions
- In a mixing bowl, whip the heavy cream until soft peaks form. Add sugar and vanilla extract, then continue to whip until stiff peaks are achieved. Spoon the whipped cream into dessert cups, filling them about two-thirds full.
- In a saucepan, combine mixed berries, sugar, and lemon juice. Cook over medium heat for about 5-7 minutes until the berries break down and the mixture thickens slightly. Remove from heat and allow to cool.
- Spoon the cooled berry compote over the whipped cream layer in each cup. Top with fresh berries for garnish (optional).
