Description

This creamy baked corn casserole is a delicious side dish perfect for any meal!

Ingredients

Scale
  • 3 cups corn kernels (fresh, frozen, or canned)
  • 1 cup heavy cream
  • 1/2 cup milk
  • 2 tablespoons butter, melted
  • 2 eggs
  • 1/4 cup flour
  • 1/4 cup sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup breadcrumbs
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C).

  2. Prepare Corn Mixture: In a large mixing bowl, combine the corn kernels, heavy cream, milk, and melted butter. Mix well.

  3. Combine Dry Ingredients: In a separate bowl, mix together the flour, sugar, salt, and black pepper.

  4. Mix Everything Together: Gradually add the dry ingredients to the corn mixture, stirring constantly to avoid lumps. Add the eggs, one at a time, mixing thoroughly after each addition. Stir in the shredded cheddar cheese until well combined.

  5. Transfer to Baking Dish: Pour the mixture into a greased baking dish.

  6. Top with Breadcrumbs: Sprinkle the breadcrumbs evenly over the top.

  7. Bake: Bake in the preheated oven for 45–50 minutes, or until the top is golden brown and the casserole is set in the center.

  8. Garnish: Remove from the oven and let it cool slightly. Garnish with chopped parsley before serving, if desired.

Notes

  • For a spicier version, add chopped jalapeños or a pinch of cayenne pepper to the mixture.
  • To enhance the flavor, you can add a tablespoon of grated Parmesan cheese to the breadcrumb topping.
  • If using frozen corn, make sure to thaw and drain it before mixing.
  • Ensure the casserole is completely set by inserting a toothpick in the center; it should come out clean.
