A delicious and healthy dish featuring penne pasta and mixed winter vegetables.
Ingredients

- 8 oz penne pasta
- 2 cups mixed winter vegetables (carrots, Brussels sprouts, kale)
- 2 tbsp extra virgin olive oil
- 3 cloves garlic, minced
- 1 cup freshly grated Parmesan cheese
- Salt and pepper to taste
- 2 tbsp fresh herbs (thyme or parsley), chopped
Instructions
- Bring a large pot of salted water to a boil. Cook the penne until al dente (about 8-10 minutes), then drain, reserving some pasta water.
- In a skillet over medium heat, add olive oil. Sauté minced garlic and mixed winter vegetables for 5-7 minutes until tender.
- Season veggies with salt and pepper. Add drained pasta and a splash of reserved water; toss gently to combine.
- Remove from heat, mix in half of the Parmesan until melted.
- Serve in bowls topped with remaining cheese and fresh herbs.
