Ingredients

  • 2 cups mixed winter vegetables (carrots, Brussels sprouts, kale)
  • 2 tbsp extra virgin olive oil
  • 3 cloves garlic, minced
  • 1 cup freshly grated Parmesan cheese
  • Salt and pepper to taste
  • 2 tbsp fresh herbs (thyme or parsley), chopped

Instructions

  1. Bring a large pot of salted water to a boil. Cook the penne until al dente (about 8-10 minutes), then drain, reserving some pasta water.
  2. In a skillet over medium heat, add olive oil. Sauté minced garlic and mixed winter vegetables for 5-7 minutes until tender.
  3. Season veggies with salt and pepper. Add drained pasta and a splash of reserved water; toss gently to combine.
  4. Remove from heat, mix in half of the Parmesan until melted.
  5. Serve in bowls topped with remaining cheese and fresh herbs.
