Description

Ingredients

  • 2 cups canned white beans (drained and rinsed)
  • 2 tablespoons extra virgin olive oil
  • 1 cup diced carrots
  • 1 cup diced celery
  • 4 cloves garlic (minced)
  • 4 cups vegetable broth
  • 2 tablespoons fresh rosemary (chopped)
  • 2 cups fresh spinach or kale

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced carrots and celery; sauté for about 5 minutes until tender.
  2. Stir in minced garlic; cook for another minute until fragrant.
  3. Add the white beans and vegetable broth; mix well and bring to a simmer.
  4. Season with chopped rosemary, salt, and pepper to taste. Let simmer on low heat for 15 minutes.
  5. Stir in spinach or kale just before serving, cooking for another 3 minutes until wilted.
  6. Serve hot, drizzled with extra olive oil if desired.
