A hearty and healthy white bean and vegetable soup, perfect for any meal.
Ingredients

- 2 cups canned white beans (drained and rinsed)
- 2 tablespoons extra virgin olive oil
- 1 cup diced carrots
- 1 cup diced celery
- 4 cloves garlic (minced)
- 4 cups vegetable broth
- 2 tablespoons fresh rosemary (chopped)
- 2 cups fresh spinach or kale
Instructions
- Heat olive oil in a large pot over medium heat. Add diced carrots and celery; sauté for about 5 minutes until tender.
- Stir in minced garlic; cook for another minute until fragrant.
- Add the white beans and vegetable broth; mix well and bring to a simmer.
- Season with chopped rosemary, salt, and pepper to taste. Let simmer on low heat for 15 minutes.
- Stir in spinach or kale just before serving, cooking for another 3 minutes until wilted.
- Serve hot, drizzled with extra olive oil if desired.
