Description

Delicious roasted baby potatoes tossed in a flavorful cowboy butter sauce, perfect as a side dish!


Ingredients

  • 2 pounds baby potatoes, halved
  • 4 tablespoons unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon crushed red pepper flakes
  • 2 tablespoons chopped fresh parsley
  • Salt and black pepper, to taste

Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss the halved baby potatoes with 1 tablespoon of melted butter, salt, and black pepper.
  3. Spread the potatoes on the prepared baking sheet, cut side down. Roast for 30-35 minutes, or until golden and crisp.
  4. Meanwhile, in a small bowl, whisk together the remaining melted butter, minced garlic, Dijon mustard, lemon juice, smoked paprika, and red pepper flakes.
  5. Remove the roasted potatoes from the oven and place them in a serving bowl. Pour the cowboy butter sauce over the potatoes and toss to coat.
  6. Garnish with fresh parsley and serve immediately.
