- 2 pounds baby potatoes, halved
- 4 tablespoons unsalted butter, melted
- 3 cloves garlic, minced
- 1 tablespoon Dijon mustard
- 1 tablespoon fresh lemon juice
- 1 teaspoon smoked paprika
- 1/2 teaspoon crushed red pepper flakes
- 2 tablespoons chopped fresh parsley
- Salt and black pepper, to taste
Instructions
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a large bowl, toss the halved baby potatoes with 1 tablespoon of melted butter, salt, and black pepper.
- Spread the potatoes on the prepared baking sheet, cut side down. Roast for 30-35 minutes, or until golden and crisp.
- Meanwhile, in a small bowl, whisk together the remaining melted butter, minced garlic, Dijon mustard, lemon juice, smoked paprika, and red pepper flakes.
- Remove the roasted potatoes from the oven and place them in a serving bowl. Pour the cowboy butter sauce over the potatoes and toss to coat.
- Garnish with fresh parsley and serve immediately.
