Description

Delicious cookies made with cornmeal and honey, frosted with a sweet honey buttercream.


Ingredients

  • 1 cup Cornmeal (Use finely ground for best results)
  • 1 cup All-Purpose Flour (Can be substituted with gluten-free flour)
  • 1 tbsp Baking Powder
  • 1 tbsp Cornstarch
  • 1 tsp Kosher Salt
  • 1/2 cup Unsalted Butter (Room temperature)
  • 1/2 cup Light Brown Sugar
  • 1/2 cup Granulated Sugar
  • 1/4 cup Honey (Natural sweetener)
  • 2 large Eggs (Room temperature)
  • 1 tsp Vanilla Extract
  • 1/2 cup Unsalted Butter (Softened)
  • 1/4 cup Honey
  • 2 cups Powdered Sugar (Sift for smoother consistency)
  • 1 pinch Optional Cinnamon (For extra warmth)
  • 1 tbsp Honey Drizzle (For garnish)
  • 1 tsp Flaky Sea Salt (Sprinkle on top)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the unsalted butter, light brown sugar, granulated sugar, and honey until light and fluffy.
  3. Add the eggs one at a time followed by the vanilla extract, mixing until smooth.
  4. In a separate bowl, whisk together the cornmeal, flour, baking powder, cornstarch, and salt.
  5. Gradually mix the dry ingredients into the wet mixture until a thick dough forms.
  6. Scoop about 1/4 cup of dough, roll into balls, flatten slightly, and place on the baking trays.
  7. Bake for 11-14 minutes or until the edges are set.
  8. Cool on the baking sheets for a few minutes before transferring to a wire rack.
  9. In a medium bowl, beat the softened butter, honey, and powdered sugar until smooth. Add cinnamon if desired.
  10. Frost the cooled cookies and drizzle with additional honey and a sprinkle of flaky sea salt.

  • These cookies are best enjoyed fresh, but can be stored in an airtight container for up to 3 days.
