Description
Delicious cookies made with cornmeal and honey, frosted with a sweet honey buttercream.
Ingredients

- 1 cup Cornmeal (Use finely ground for best results)
- 1 cup All-Purpose Flour (Can be substituted with gluten-free flour)
- 1 tbsp Baking Powder
- 1 tbsp Cornstarch
- 1 tsp Kosher Salt
- 1/2 cup Unsalted Butter (Room temperature)
- 1/2 cup Light Brown Sugar
- 1/2 cup Granulated Sugar
- 1/4 cup Honey (Natural sweetener)
- 2 large Eggs (Room temperature)
- 1 tsp Vanilla Extract
- 1/2 cup Unsalted Butter (Softened)
- 1/4 cup Honey
- 2 cups Powdered Sugar (Sift for smoother consistency)
- 1 pinch Optional Cinnamon (For extra warmth)
- 1 tbsp Honey Drizzle (For garnish)
- 1 tsp Flaky Sea Salt (Sprinkle on top)
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large mixing bowl, cream together the unsalted butter, light brown sugar, granulated sugar, and honey until light and fluffy.
- Add the eggs one at a time followed by the vanilla extract, mixing until smooth.
- In a separate bowl, whisk together the cornmeal, flour, baking powder, cornstarch, and salt.
- Gradually mix the dry ingredients into the wet mixture until a thick dough forms.
- Scoop about 1/4 cup of dough, roll into balls, flatten slightly, and place on the baking trays.
- Bake for 11-14 minutes or until the edges are set.
- Cool on the baking sheets for a few minutes before transferring to a wire rack.
- In a medium bowl, beat the softened butter, honey, and powdered sugar until smooth. Add cinnamon if desired.
- Frost the cooled cookies and drizzle with additional honey and a sprinkle of flaky sea salt.
Notes
- These cookies are best enjoyed fresh, but can be stored in an airtight container for up to 3 days.
- Feel free to experiment with different spices in the frosting or cookie dough.
