- 1 lb Chicken breast (cut into bite-sized pieces)
- 1 can Coconut milk (full-fat for creaminess)
- 1 tbsp Curry powder
- 1 tbsp Ginger (freshly grated)
- 2 cloves Garlic (minced)
- 1 medium Onion (chopped)
- 1 tbsp Vegetable oil
- 1 cup Chicken broth
- 1 tbsp Lime juice (freshly squeezed)
- 1 tbsp Cilantro (for garnish)
- 1 tsp Salt (to taste)
- 1 tsp Black pepper (to taste)
Instructions
- Heat the vegetable oil in a large skillet over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and grated ginger, cooking for an additional minute.
- Add the chicken pieces and cook until browned on all sides, about 5-7 minutes.
- Sprinkle the curry powder, salt, and black pepper over the chicken, stirring to coat.
- Pour in the coconut milk and chicken broth, bringing the mixture to a simmer.
- Reduce heat and let it simmer for 15-20 minutes, until the chicken is cooked through.
- Stir in the lime juice and adjust seasoning if necessary.
- Serve hot, garnished with fresh cilantro.
Notes
- Feel free to adjust the spice level by adding more or less curry powder.
- This dish pairs well with rice or naan.
