Description

A creamy and flavorful coconut chicken curry that’s easy to make.


Ingredients

  • 1 lb Chicken breast (cut into bite-sized pieces)
  • 1 can Coconut milk (full-fat for creaminess)
  • 1 tbsp Curry powder
  • 1 tbsp Ginger (freshly grated)
  • 2 cloves Garlic (minced)
  • 1 medium Onion (chopped)
  • 1 tbsp Vegetable oil
  • 1 cup Chicken broth
  • 1 tbsp Lime juice (freshly squeezed)
  • 1 tbsp Cilantro (for garnish)
  • 1 tsp Salt (to taste)
  • 1 tsp Black pepper (to taste)

Instructions

  1. Heat the vegetable oil in a large skillet over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and grated ginger, cooking for an additional minute.
  4. Add the chicken pieces and cook until browned on all sides, about 5-7 minutes.
  5. Sprinkle the curry powder, salt, and black pepper over the chicken, stirring to coat.
  6. Pour in the coconut milk and chicken broth, bringing the mixture to a simmer.
  7. Reduce heat and let it simmer for 15-20 minutes, until the chicken is cooked through.
  8. Stir in the lime juice and adjust seasoning if necessary.
  9. Serve hot, garnished with fresh cilantro.

Notes

  • Feel free to adjust the spice level by adding more or less curry powder.
