Description

Delicious lemon-flavored cookies that are perfect for any occasion!


Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 0 teaspoon salt

Instructions

  1. Cream the butter and sugar together until light and fluffy.
  2. Add lemon zest, lemon juice, egg, and vanilla. Mix until well blended.
  3. In a separate bowl, whisk together the flour and salt. Gradually add to wet ingredients.
  4. Mix until dough forms. Do not overmix.
  5. Wrap dough in plastic and chill for at least 1 hour.
  6. Preheat oven to 350°F (175°C). Roll dough to 1/4 inch thickness and cut with tree-shaped cookie cutters.
  7. Place on parchment-lined baking sheet.
  8. Bake 8–10 minutes until edges are lightly golden.
  9. Cool on tray for a few minutes, then transfer to wire rack.
  10. Decorate with glaze, powdered sugar, or sprinkles as desired.
