Ingredients

- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 tablespoon lemon zest
- 2 tablespoons fresh lemon juice
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour

Instructions
- Cream the butter and sugar together until light and fluffy.
- Add lemon zest, lemon juice, egg, and vanilla. Mix until well blended.
- In a separate bowl, whisk together the flour and salt. Gradually add to wet ingredients.
- Mix until dough forms. Do not overmix.
- Wrap dough in plastic and chill for at least 1 hour.
- Preheat oven to 350°F (175°C). Roll dough to 1/4 inch thickness and cut with tree-shaped cookie cutters.
- Place on parchment-lined baking sheet.
- Bake 8–10 minutes until edges are lightly golden.
- Cool on tray for a few minutes, then transfer to wire rack.
- Decorate with glaze, powdered sugar, or sprinkles as desired.
Notes
- Make sure to chill the dough to prevent the cookies from spreading too much.
- Use fresh lemon juice for the best flavor.
