Instructions

  1. Make the peanut butter filling: In a small bowl, mix the creamy peanut butter and powdered sugar until it forms a thick dough. Roll into 12 small balls (about 1 teaspoon each) and freeze for 15–20 minutes. This step is key—it keeps the filling intact while baking.
  2. Prepare the chocolate cookie dough: In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. In a separate large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the egg and vanilla extract, beating until well combined. Slowly add in the dry ingredients and mix until a soft dough forms. Fold in the chocolate chips for that extra hit of chocolate in every bite.
  3. Assemble the cookies: Scoop out about 1½ tablespoons of chocolate dough. Flatten slightly in your hand, place a chilled peanut butter ball in the center, and gently wrap the dough around it. Roll into a smooth ball and place on a parchment-lined baking sheet. Repeat with remaining dough and filling.
  4. Bake: Preheat your oven to 350°F (175°C). Bake the cookies for 9–11 minutes. The tops will look just set, but the magic happens as they cool. Leave them on the baking sheet for about 5 minutes before transferring to a cooling rack. Inside, that luscious peanut butter will still be warm and molten.
