Delicious chocolate cookies filled with creamy peanut butter.

- 1 cup flour
- 1/2 cup unsweetened cocoa powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 1 large egg
- 1 cup creamy peanut butter
- 1/2 cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together flour, cocoa powder, baking soda, and salt. Set aside.
- In another bowl, beat together softened butter, brown sugar, and granulated sugar until creamy.
- Add vanilla extract and egg to the butter mixture and mix until well incorporated.
- Gradually fold in the dry mixture until just combined.
- In a separate bowl, mix together creamy peanut butter and powdered sugar until smooth.
- Roll cookie dough into balls, flatten slightly, and place a dollop of peanut butter filling in the center. Fold edges over and roll back into balls.
- Place on a baking sheet lined with parchment paper and bake for 10-12 minutes.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack.
