- ¾ cup warm milk (100–110°F)
- 1 tbsp instant yeast
- 2 tbsp granulated sugar
- 3¼ cups all-purpose flour
- ½ tsp salt
- 2 large eggs
- ¼ cup unsalted butter, softened
- Oil, for frying (vegetable or canola)
- 1 cup fresh or thawed frozen cherries
- 1 tbsp water
- 2 cups powdered sugar
Instructions
- Activate the Yeast – In a small bowl, mix the warm milk, sugar, and yeast. Let it sit for 5–10 minutes until frothy. This step wakes up the yeast and ensures a good rise in your cherry doughnuts.
- Make the Dough – In a large mixing bowl or stand mixer, combine the flour and salt. Add the eggs, softened butter, and the activated yeast mixture. Mix until the dough comes together, then knead for 8–10 minutes until smooth and elastic. If using a mixer, use the dough hook on medium speed. The dough should be slightly tacky but not sticky.
- First Rise – Place the dough in a lightly greased bowl, cover with a clean towel, and let it rise in a warm spot for 1–1½ hours or until doubled in size.
- Shape the Doughnuts – Roll out the dough on a lightly floured surface to about ½-inch thickness. Use a doughnut cutter or two round cutters (3½-inch and 1-inch) to shape your doughnuts. Re-roll the scraps and repeat. Place the cut doughnuts on parchment-lined trays and cover them with a towel. Let them rise for another 30–45 minutes.
- Make the Cherry Glaze – While the doughnuts are rising, combine the cherries and water in a saucepan. Simmer until the cherries break down, about 5–7 minutes. Strain through a fine sieve to remove solids, pressing to extract the juice. Whisk the cherry juice with powdered sugar until smooth. Adjust with more sugar for a thicker glaze or a few drops of water for a thinner one.
- Fry the Doughnuts – Heat oil in a deep fryer or heavy pot to 350°F (175°C). Carefully lower in 2–3 doughnuts at a time and fry until golden brown, about 1 minute per side. Remove with a slotted spoon and drain on paper towels.
- Glaze and Serve – Once the doughnuts are cool enough to handle, dip them into the cherry glaze. Let the glaze set on a cooling rack or serve immediately for a sticky-sweet finish.
