Description

Delicious spicy chicken sandwiches with a crispy exterior and juicy interior, perfect for a quick meal.


Ingredients

  • 1 1/2 pounds skinless chicken breasts
  • 1 tablespoon unsalted butter or olive oil
  • 1/2 tablespoon smoked paprika
  • 1 teaspoon cayenne pepper
  • 1/2 teaspoon oregano
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • salt to taste
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon thyme
  • brioche buns
  • pickles
  • spicy mayo

Instructions

  1. Pat the chicken dry.
  2. Combine the spices in a bowl and sprinkle them over the chicken; rub them in well. Be sure to season both sides and the edges, adjusting the amount based on the chicken size.
  3. Preheat the oven to 425 degrees.
  4. Heat a cast iron or stainless-steel skillet on medium-high heat. Add 1 tablespoon of butter.
  5. When the butter has melted, add the chicken to the pan. Do not overcrowd the pan; cook in batches if necessary.
  6. Cook the chicken for 3-4 minutes on each side or until charred on both sides.
  7. Transfer the chicken to the preheated oven. Bake for 10-15 minutes or until it reaches a minimum internal temperature of 165 degrees.
  8. Allow the chicken to rest for 5-10 minutes.
  9. Load the chicken onto buns with toppings.
  10. Air fry the chicken at 360 degrees for 15-18 minutes (flip halfway through) or until it reaches at least 165 degrees.
  11. Allow the chicken to rest for 5-10 minutes before serving.
  12. Load the chicken onto buns with toppings.

Notes

  • Regular paprika can be used instead of smoked paprika if preferred.
  • Adjust the amount of cayenne pepper for desired spice level.
  • Use a meat thermometer to ensure chicken is properly cooked.
