Description

This delicious Berry Flag Cake is perfect for summer gatherings and patriotic celebrations. A light and fluffy cake topped with whipped cream and fresh berries creates a beautiful dessert that everyone will love.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter (softened)
  • 1 cup milk (room temperature)
  • 2 large eggs (room temperature)
  • 1 tsp vanilla extract
  • 2 cups heavy whipping cream (chilled)
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup strawberries (sliced)
  • 1 cup blueberries
  • 1 cup raspberries

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line a 9×13 inch baking pan with parchment paper.
  2. In a large mixing bowl, combine flour, sugar, baking powder, and salt.
  3. Add softened butter, milk, eggs, and vanilla extract. Beat with an electric mixer on medium speed until smooth and well combined, about 2 minutes.
  4. Pour the batter into the prepared baking pan and spread evenly.
  5. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Allow to cool completely.
  6. In a mixing bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
  7. Once the cake is cooled, spread the whipped cream evenly over the top.
  8. Arrange the strawberries in rows to form the stripes of the flag and place blueberries in the top left corner to represent the stars.
  9. Chill the cake for at least 30 minutes before serving.
