Description

This delicious air fryer chicken sandwich is crispy on the outside and tender on the inside, perfect for a quick meal!


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup pickle juice
  • 1/2 cup buttermilk
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon powdered sweetener
  • 1 teaspoon cayenne pepper (optional)
  • 1 egg (beaten)
  • cooking oil
  • 2 buns
  • 4 slices dill pickle chips
  • 2 slices leaf lettuce (optional)
  • 4 slices fresh tomatoes (optional)
  • 1/4 cup mayo
  • 2 tablespoons honey
  • 2 teaspoons BBQ Sauce
  • 2 teaspoons Dijon mustard
  • 1 teaspoon yellow mustard
  • 1/2 teaspoon xanthan gum

Instructions

  1. Brine the chicken: Add chicken breasts to a bowl with pickle juice and buttermilk. Refrigerate for 30 minutes.
  2. Prepare the dredging mixture: In a large bowl, combine flour, paprika, garlic powder, salt, pepper, and sweetener.
  3. Beat the egg in a separate bowl.
  4. Spray the air fryer basket with cooking oil.
  5. Remove the chicken from the marinade, dredge in beaten egg, then flour, and place in the air fryer basket.
  6. Spritz top of chicken with peanut oil.
  7. Air fry at 400°F for 15 minutes.
  8. Flip chicken carefully using tongs and spritz the other side with oil.
  9. Air fry for an additional 5-7 minutes until chicken is crisp and reaches an internal temperature of 165°F.
  10. Toast buns for 3-4 minutes at 400°F.
  11. Remove chicken, assemble sandwich with buns, pickles, lettuce, tomatoes, mayo, honey, BBQ sauce, and mustard.
  12. Thicken the sauce: Add xanthan gum to a separate bowl with 2 teaspoons of sauce, stir, then add it to the bowl with the rest of the sauce.

Notes

  • For buttermilk substitute, mix milk with vinegar.
  • The egg in the recipe is optional.
