Description
This delicious air fryer chicken sandwich is crispy on the outside and tender on the inside, perfect for a quick meal!
Ingredients

- 2 boneless, skinless chicken breasts
- 1 cup pickle juice
- 1/2 cup buttermilk
- 1/2 cup all-purpose flour
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon powdered sweetener
- 1 teaspoon cayenne pepper (optional)
- 1 egg (beaten)
- cooking oil
- 2 buns
- 4 slices dill pickle chips
- 2 slices leaf lettuce (optional)
- 4 slices fresh tomatoes (optional)
- 1/4 cup mayo
- 2 tablespoons honey
- 2 teaspoons BBQ Sauce
- 2 teaspoons Dijon mustard
- 1 teaspoon yellow mustard
- 1/2 teaspoon xanthan gum
Instructions
- Brine the chicken: Add chicken breasts to a bowl with pickle juice and buttermilk. Refrigerate for 30 minutes.
- Prepare the dredging mixture: In a large bowl, combine flour, paprika, garlic powder, salt, pepper, and sweetener.
- Beat the egg in a separate bowl.
- Spray the air fryer basket with cooking oil.
- Remove the chicken from the marinade, dredge in beaten egg, then flour, and place in the air fryer basket.
- Spritz top of chicken with peanut oil.
- Air fry at 400°F for 15 minutes.
- Flip chicken carefully using tongs and spritz the other side with oil.
- Air fry for an additional 5-7 minutes until chicken is crisp and reaches an internal temperature of 165°F.
- Toast buns for 3-4 minutes at 400°F.
- Remove chicken, assemble sandwich with buns, pickles, lettuce, tomatoes, mayo, honey, BBQ sauce, and mustard.
- Thicken the sauce: Add xanthan gum to a separate bowl with 2 teaspoons of sauce, stir, then add it to the bowl with the rest of the sauce.
Notes
- For buttermilk substitute, mix milk with vinegar.
- The egg in the recipe is optional.
- Adjust seasoning to suit your taste.
